Origin & Producer 

Finca El Paraiso (Paradise) is a small family farm nestled in the Piendamó municipality of Cauca, Colombia lead by Diego Bermudez. Diego is a pioneer in experimental fermentation techniques and his efforts have pushed the boundaries of flavor through innovations in production and experimental processing. 

Processing

This innovative processing method is specific only to Finca El Paraiso. The name Lychee Peach refers to the process by which Diego along with scientists on his team take yeast extractions from various fruit, in this case lychee and peach, from which bacteria develop and is added to coffee cherries to co-ferment.

The coffee then undergoes two rounds of fermentations. The cherries first undergoe a meticulous 36-hour anaerobic fermentation in cherry. This is followed by a 12-hour secondary fermentation to amplify the aromas and flavors. When a specific PH level is achieved, the coffee is arrested by a 'thermal shock' immersion in cold water. This along with the drying process with a dehumidifier locks in the unique vibrant notes of the coffee. Through this multi-step innovative process and the introduction of specific micro-organisms during fermentation, a precise and unique flavor profile is created. It's an extraordinary amount of extra effort, and the results speak for themselves.
