What we love about this coffee is its complexity and sweetness. Although not the fruitiest of profiles in our microlot lineup, there's something very comforting about this coffee and you'll be intrigued by it from the very first sip. It is balanced and the mellow plum acidity adds interest and complexity to the chocolate and baking spice backbone of this coffee. On the finish, we even got a hint of pineapple on the cupping table. Overall, we tasted dark chocolate, baking spices and plum. It's simply delicious!
Origin & Producer
This is the first time we roasted the unique Chiroso coffee variety. There is some debate about the origin of the unique Chiroso variety. Some research suggests that it is a mutation of Caturra, while other studies found that Chiroso is genetically linked to Ethiopian heirloom varieties. The "myth" of its origin remains...
Maximiliano Vargas has been working with coffee since 2000 and has been growing approximately 3,500 Chiroso trees at his Finca La Fortuna. Maximiliano is meticulous with his coffee processing: he picks the cherries on one day, depulps 24 hours later, lets the coffee sit in a fermentation tank for 72 hours, then washes it. Maximiliano has been committed to continuously improving the quality of his coffee. He is planning on making various improvements on his farm, starting with his drying facilities and also his wet beneficio. He believes these projects will allow him to make the quality of his coffee even higher.
This coffee is part of our Microlot Artist Collaboration Series. The label was designed by the talented Phoebe Lo, inspired by her first sip.
